How paid psychology studies actually work
University research runs under ethical review: a board approves the protocol before anyone is recruited, you are given a consent form explaining what will happen and what is being measured, and you can stop at any point without giving a reason and still be paid for the part you completed. Students usually sign up through a departmental scheduling system; members of the public join lab mailing lists or registries. Payment is by cash, cheque, or gift card, and campus studies sometimes offer course credit instead — which is not the same thing and is always stated up front.
Who gets selected
Students are recruited most heavily because they are convenient, but a great deal of research specifically needs non-students — psychology has a well-known problem with over-relying on undergraduate samples, and funders increasingly push back on it. Being older, not in education, or from a background research usually misses makes you more valuable, not less. Imaging studies are the exception: metal implants, some tattoos, claustrophobia, and pregnancy rule people out regardless of anything else.

Genuine academic research names the institution and the principal investigator, provides a consent form before anything begins, and gives you an ethics board reference you can check.
